But actually, my entry is not about Laura’s Lean Beef (TM). No, I wanted to devote these few thoughts to Max, our wise Judge and dear friend. More than once he’s had to set my opponent straight after particularly churlish tantrums. He has given me sage counsel as I pondered my opponent's treachery. We are both the better for it. Max is like our lighthouse in the fog. Where would we be without him? Probably eating chicken, for all I know.
So Max, with this medium rare, gorgeous cut of meat named after your home town, I salute you! 10 ounces. (288 total)

And I'm sorry you might not have been able to smell the meat over the shit no doubt deeply embedded in your sinuses. It looks like nice meat.
Posted by: Guy at February 19, 2004 08:28 AMIt was a lean cut, the marbling didn't melt, it started out as 13 oz. That's nearly a 25% reduction from pre-cooked weight.
I agree that we need some kind of standardized methodology.
